Since 1990 we transform by hand tomatoes only cultivated by us. We have recovered native stumps, everywhere replaced with the industrial type, less good but more productive. A farmer of yesteryear Ciro Sirena, gave us the seeds of the type that we use: The  Sammarzano, The Torremaggiorese and the Prunilli, a rustic type that grows in dry farming and produces hundreds of quintals per hectare versus the one thousand of the industry. We cultivate through biological farming since 1988. We collect by hand and work only ingredients cultivated in our farm.
