An unfiltered, unpasteurized beer from the Ceci family, double-fermented in bottle.
Main dishes of pork, polenta with important seasonings, seasoned cheeses, smoked cold cuts and, in any case, well combined with Parmesan typical cuisine.
The Kiodo is a pure barley malt beer where the grape must is produced in a brewing room using the traditional technique of infusion. Hopping takes place with aromatic hops during several phases including wort boiling and using the dry-hop system during a long phase of maturation in cold-fermenters. To increase the particular aromatic quality
we use high fermentation brewer’s yeast with processing between 22°C and 24°C. Following fermentation the beer rests at a cold temperature to remove unnecessary yeasts. The beer is then bottled without being subject to filtration or pasteurization, and the yeasts still present thus continue fermentation in the bottle, resulting in light and natural sparkling of the product.
