Produced on the Ragusa area in the month of October/ November 

Color: in the liquid state it appears very dark to become lighter, hazel-colored following crystallization.
Crystallization: very fast, crystallizes a few days after the honey extraction being produced in a  particularly cold period.

Rare honey of difficult production being a winter honey.
Smel: It has a particular scent that reminds the fruit.
Taste: Very particular to be slowly dissolved in the mouth, almost creamy consistency.
