Produced in pastures that vary according to the years, in Palermo Agrigento and Trapani areas.

Color: amber when liquid, tending to brown.
Smel: quite aromatic reminiscent of wild fennel.
Taste: fairly strong, with a slighty bitter of aftertaste rich in mineral salts.
Uses: It goes well with delicate cheeses, ricotta, not aged.
