ZELO PASTA


Zelo is a small and young artisanal company that produces Pasta all'uovo in the Marche, a region on the East side of Italy touched by the Adriatic Sea.



This region has more than 100 km of coast, with the second biggest fishing fleet in Italy and where mountains are only 40 km distant from the sea. These unique features made the marchigiana cuisine one of the richest and most different cuisines of fresh and first quality ingredients.



Several years ago their culinary passion, always alive in their own family, made them discover a new and revolutionary production method for pasta all’uovo.


The pasta all'uovo represents the main dish of the Sunday lunch, their grandmothers and mothers knead flour and egg by hand as the marchigiana tradition requires to make the tagliatelle.This long tradition, combined with the perfect research, allows them to create Zelo's pasta all'uovo.
 What makes these products unique is the total absence of stress and overheating of the mixture during the working phase. We don't make the classic durum and eggs mixture with the kneader, as to knead, energy is required and so the heat damages the eggs. We hydrate the durum with egg: in a closed tub the durum is nuked and very slowly we add the egg, at the end we obtain some agglomerate (a lot of "little balls" more or less big) of durum and egg completely untied and cold. These agglomerates are put in a laminator: two big steel rollers that slowly turn and amear these small balls creating the puff pastry of pasta instead of pumping the pasta in one slot and obtaining the puff pastry for extrusion, creating in their opinion, more mechanical stress to the pasta.



The raw materials used are all 100% Italian: durum wheat flour of Altamura and eggs of marchigiane hens raised on ground.



 The advantages obtained by this revolutionary method are: high chewiness, the pasta remains always al dente, it doesnt's stick, has a great roughness and high digestibility because by not overheating eggs in the working phase we don’t modify their natural feautures.
