The olives of the "Furgentini" selection come exclusively from the olive groves of the Giorgio Avola farm, located in the south east of Sicily, to be precise in Frigintini, a rural province of Modica. The olives are cultivated according to the biological agriculture process, in a territory highly suited for olive and oil growing. It's not by accident that the entire area is part of the Dop "Iblei mountains".


Following with care and attention all the steps concerning the olive collection, their squeeze, and the oil preservation, Giorgio Avola's farm is able to bring on your table a product by the undisputed quality and features. It is Giorgio Avola himself that checks the production in the farm, making sure that the maintenance of the high quality will always be respected throughout the supply chain. 


The cultivated olives belong to different types: round iblea, verdese, moresca. In any case the olives from the Giorgio Avola's farm are collected exclusively by hand with the nibbling system. From the olives collection to the pressing-carried out strictly in continuous cycle and at low temperature- no more than 24 hours go by, avoiding the oxidation and fermentation process and consequently the oil defects.
