The borettane onions are a variety of vegetables well known and appreciated for its unique and unmistakable taste. Easily recognizable by its classic flattened shape, this small onion is particurarly appreciated for its typical sour taste, intense and sweet at the same time. It represents a real gastronomic excellence in the Italian culinary tradition.

The cane sugar that is used is a raw organic sugar, obtained directly from the juice extracted from the crushed cane through artisanal operations, whithout the use of chemicals and treatments with solvents. The selected Kampot red pepper is a real rarity. Collected and processed manually in small quantity in Cambodia, it gives the recipe a strong sweet note with a clear hint of red fruits and rose hips. Mixed with the acidic and sweet note of vinegar, and chives, this ingredient create a balance that is completed with Garda extra virgin olive oil and high oleic sunflower.
