Produced in the Messina area, in mid-mountain areas in the months of June/July.

Color: from amber to almost black, depending on the production areas.
Crystallization: generally absent or large crystals.
Odor: strong and penetrating, tannic.
Taste: not too sweet with a bitter aftertaste, rich in minerals.
Uses: to be used with un-aged or medium-aged cheeses. It has disinfectant properties for the urinary tract, it is recommended for children and the elderly and for those with anemia problems as it is rich with iron. Appreciated by light diabetics because its sugar content is largely due to fructose and therefore does not require insulin for its metabolization.
